We taste and evaluate every batch of chili. You will learn to identify flavor, texture, and aroma attributes unique to our famous chili and assist in production floor approvals and sensory panel evaluations. All required to ensure we provide delicious and consistent chili to our restaurant customers.
Quality Assurance

You will be trained in accordance with good manufacturing practices and food safety, including specialized course work in Hazard Analysis Critical Control Point Systems. All designed to guarantee every batch is safe and wholesome for our consumers.
Food Safety

This is at the center of your role as a member of the Commissary team. Our daily operations include weighing and batching ingredients, cooking, packaging, and packing out. On the job training is provided in food handling, equipment operation and record keeping.
Food Production

Setting up and breaking down machinery, kettles, pumps, pipes, and valves is part of daily operations. Machine operators will complete light maintenance to keep machinery in optimal condition and learn to identify potential issues that lead to equipment failures.
Maintenance

Receiving and Shipping is the beginning and end of everything we do. Dock inspections are performed on all incoming materials and outgoing finished goods. Inventory counts are performed, and shipping documents are completed. Commissary team members are certified to operate power industrial lift trucks to load and unload trailers.
Warehousing

The commissary team certainly spends as much time cleaning as cooking. We break down and thoroughly clean all production equipment daily and complete monthly, quarterly, and annual cleaning task as scheduled. We take pride in keeping our plant one of the cleanest operations in the city. We keep everything looking like new.
